king Salmon Fillets Skin On Pin Bone In
The Ins and Outs of Pin-Boning Salmon
Pin-Boning is the removal of the lateral bones, which are attached to the skin of the salmon.
We are often asked to remove these bones. However, in doing so, the flesh of the salmon is fractured, which may affect the appearance, and also allow moisture and protein to escape upon cooking.
We recommend leaving the bones in and remove them yourselves after cooking, using tweezers, which is easier and gives a better finished product.
King salmon flesh is an attractive dark pink to red colour. Its oil content is higher than any other salmon and it is a rich source of Omega 3 fatty acids. King salmon's rich flavour makes it perfect for sashimi or for baking, grilling and hot or cold smoking.
PLEASE NOTE A WHOLE FILLET (1XSIDE) IS 1.5 KG EACH
