The Ins and Outs of Pin-Boning Salmon
Pin-Boning is the removal of the lateral bones, which are attached to the skin of the salmon.
We are often asked to remove these bones. However, in doing so, the flesh of the salmon is fractured, which may affect the appearance, and also allow moisture and protein to escape upon cooking.
We recommend leaving the bones in and remove them yourselves after cooking, using tweezers, which is easier and gives a better finished product.
